Drexel University is continually striving to provide innovative dining experiences for students by tailoring offerings to the student population. To meet the demand of health conscious and vegetarian students, Drexel offers Vegetate. Located within Chestnut Square, a dynamic hub of retail, residential, and academic life in the heart of the main campus, Vegetate is a vegetarian quick service dining option with vegan options and features locally sourced produce.
The project involved a complete gut of an existing café and new café design for vegetarian and vegan fare. The concept for the café was to serve students and professionals with unyielding schedules, little time, and a taste for fresh, healthy meals; this required particular attention to a deliberate flow of patrons through the café. The material selections help contribute to the overall experience that is Vegetate.
